Black Moon Spell

Ready to continue our amaro adventure? This cocktail relies on an uncharacteristically pale green Italian amaro, that tastes like a forest. We never did promise we were going to play it safe at Orasella.

I’ve known Damon, the bartender who devised this cocktail for 5 years now, and, I can say, he’s never steered me wrong. He’s come up with some pretty outlandish cocktails, each more delicious than the next. Need I mention the time he successfully convinced me that Jägermeister is indeed an amaro and whipped a cocktail to prove it.

ORASELLA’S BLACK MOON SPELL

Makes 1 Cocktail

1.25oz mezcal
.75oz grapefruit juice
.5oz Alta Verde amaro
.25oz Orasella cherry syrup (adjust based on sweetness of blackberries)
4 blackberries
egg white

In a tall glass, muddle blackberries until fruit completely releases its juice. To the glass, add mezcal, grapefruit juice, amaro and Orasella cherry syrup. Mix thoroughly with the blackberries.


Strain mixture into a cocktail shaker to remove liquid from the blackberry fibers. To the cocktail shaker, add egg white and shake for 15 seconds. Add ice. Shake another 15 seconds until the foam is fully developed. Pour into a rocks glass. Top with foam and Orasella cherries to garnish.
